Here’s some paleo food for thought

In 1997 an insulin index of foods was published, ranking 38 foods on which stimulates higher insulin levels. What do you think causes a larger insulin spike, a large apple and all its sugar, a cup of oatmeal packed with carbs, a cup and a half of white flour pasta, a big bunless burger—no carbs at all, or half of a salmon fillet?

They only looked at beef and fish in the paleo diet study reviewed, but subsequent data showed that that there’s no significant difference between the insulin spike from beef, versus chicken or pork—they’re all just as high. Thus, protein- and fat-rich foods may induce substantial insulin secretion. In fact meat protein causes as much insulin release as pure sugar.

Be sure to watch to the end of the study as it also gives some interesting data on paleo diets and response to lipid levels / blood fats.

Corn, that looks so good. I like new flavors, like yorlseuf. Not sure if you like cilantro; but here’s my twist on soft taco. Try it and tell me what you think. Whole wheat soft taco shells. Chicken breast cut into strips or ground. Marinate your diced jalapeno(deseeded), bell peppers, red onions, tomatos and cilantro in lime juice. Saute chicken strips or brown ground chicken, add desired taco seasoning, then add your corn and black beans. Assemble my fiesta taco and enjoy! Hope you like it!
